Christian LE Corroller, Un avenir tracé
Having been immersed in the world of baking and pastry-making from an early age, with his aunt and uncle, craftsmen in the town of Le Mans, Christian had little chance of escaping bread and pastry.
Choosing a future profession was therefore not a question. Christian naturally opted for a bakery apprenticeship, which he then perfected with a CAP in pastry-making and a year's additional training.
With his diploma in hand, he spent a year and a half with his apprenticeship master before moving to Rennes to work for a well-known bakery: Augustin.
Two years later, he was tempted to discover restaurant pastry-making, to rub shoulders with the elite of the profession.
He started out in a "bistro-nomique" establishment in the city, where after a few months, the chef advised him to move to a larger establishment to enrich his career.
In 2010, he joined Jean-Marc Bonzeau at La Villa Madie in Cassis, taking his first steps into the world of Michelin-starred gastronomy. After a few years in prestigious restaurants, he became Pastry Chef at La Voile under the guidance of Chef Eric Canino 2* Michelin .
The story of a meeting
Christian met Théo during his years in Rennes. Théo was a student at the time (Commerce and Management). They quickly became inseparable, even sharing a flat for a few years.
During these years, the shared desire to set up a project together, and more specifically to open a patisserie, was mentioned on numerous occasions.
Théo will push Christian to do "seasons" in prestigious restaurants to further his career. It was at this point that Christian moved to the South of France, while Théo continued his studies in Brittany.
Despite the distance, Theo and Christian never lost sight of each other.
Shared values
When his son was born, Christian longed for a new life that would enable him to reconcile family and professional life. That's when Théo and Christian came up with the idea of opening a boutique in their own image in Strasbourg, the hometown of Christian's partner.
Christian and Théo share the same vision: to use seasonal produce from organic farming, while favoring short distribution channels, in order to offer creations that are as beautiful visually as they are tasty.
After a few months working on their project, they finally identified the ideal location at 2 place Clément in Strasbourg: a welcoming space and a perfect team to rely on.
Which name to choose? In memory of Christian's father, the choice quickly fell on his favorite dessert.
